Culinary Medicine: Share your favorite Thanksgiving Recipe
As physicians, you know that Thanksgiving will be different this year. Many of us are staying home and/or keeping family and friends at a distance. And of course, many of you are working long and difficult hours. That said, you still may be looking forward to cooking a special holiday meal.
The CMA believes that 'together counts more than ever', and coming together as a community of physicians is part of this. Therefore, I would like to invite you to share your favorite Thanksgiving recipe. If you're willing, let us know if there is a 'back story' to the recipe (is it your grandma's stuffing or did you develop it yourself?)
I would like to share my favorite Thanksgiving recipe which has been made for at least 5 generations. Arkansas is my birth state and my family has made this simple dish as far back as I know. I have one living uncle living but every time I make this dish I feel connected to my parents, grandparents, cousins and all who have gone on.
I am happy to share my recipe for Mashed Sweet and White Potatoes with Garlic Chives.
Mashed Sweet and White Potatoes with Garlic Chives
2-3 large white baking potatoes
2-3 large sweet potatoes
1 1/2 cups whipping cream
Salt and freshly ground pepper
Garlic chives
Preheat oven to 375 degrees. Scrub potatoes well and prick the white potatoes with a fork 4-5 times.Bake the potatoes till they they give to the touch- 45 minutes for sweet and 1 hour for white. Bring the cream to a boil in a small saucepan, then turn off heat.
Scoop the flesh out of baked potatoes into a large mixing bowl. Mash with a potato masher or by putting through a food mill. ( Do not use a blender or food processor-- it will turn into paste) Beat the cream in a little at a time with a heavy wire whisk, seasoning with salt and pepper. Garnish with minced garlic chives and serve immediately.
